I'm doing a course on systematic reviews and looking at review questions. Looking at papers on how much carbs diabetics should eat I'm finding that they consistently recommend high amounts (high to those with insulin resistance) and I wonder if they are being deliberately cautious because they fear that if they recommend too low amount of carbs then people might go hypo and possible sue them. @A DiabetesTeam Member in Canada the general recommendations from Diabetes Canada and our Diabetic Nutritionists is 40-60 carbs per meal
But, the assumption is the patient Will Be Medicated with anti-diabetics and the 40-60 carbs is the best way to ensure the (restricted) diet won't leave the (patient) deficient in other vitamins and minerals - they are looking at "total health" and not specifically to diabetics
However, there is another set of guidelines for physicians/dietitians to advise "motivated patients that may be interested in pursuing remission", and those preach "low carb" but with profesional dietary helps and close monitoring by the primary physician
I do know that they (NHS) ran a number of pilot projects in the UK following the process established by the DiRECT Study which was designed to put you in remission and there was very strict carb guidelines for that program
I have a friend that has feet neuropathy & he recommended BEE VENOM spread on the soles of feet for pain relief!

Ay, there's the rub (as Hamlet said), they are looking not for variability in response to consumption of carbs by diabetics. What I'm finding in my research (for the Systematic Review course) is encouraging - that diabetes professionals are moving closer to the idea of very low carb diets for those with insulin resistance rather than just upping their meds.
Also the "one-size-fits-all" mentality is fading away.
I don't think low carb has to equal deficiency in vitamins and minerals.
I eat low carb vegetables such as collards, spinach, okra, celery. Sometimes I throw in slightly higher carb veggies such as broccoli and cabbage to make it more interesting. I also supplement with some vitamins and minerals but don't go over the top.
