Love turnip! Tried growing some last year but the moles ate them

I had the bright idea I wanted some fried white icicle radishes. OMG, they taste nasty fried. I have never tried turnips the way you said. May try them one time. My uncle sows turnips every season. I usually take the greens and give him the turnips
I use turnips like I do radishes. I slice them very thin. Layer with salt. Let them cure for a few hours. Maybe put a weight on top to speed the fermenting.
We slice up the greens. And do the same.
It's the way we ferment many Japanese pickles. They are ready in 3+ hours, they taste great. The next day we refrigerate to stop the fermentation process.
It is good for weeks. But we normally finish them in 2-3 days.
