I make carrot curls with my meat slicer. Slicing length ways and dropping in ice water.
Strange how the way things are cut can change their flavor delish! You can marinate these once chilled. Sometimes I use a balsamic vinegar or raspberry vinegrette. A greek yogurt dressing would be nice maybe add some lemon

Carrots and vegetable dip can be a good nighttime snack for people with diabetes, as long as portion sizes and dip ingredients are considered. Carrots are naturally sweet but have a low glycemic index, meaning they won't cause a rapid spike in blood sugar. Pairing them with a low-fat, low-sugar dip like hummus or Greek yogurt-based dip can add protein and healthy fats, helping to stabilize blood sugar levels.

I eat them often - carrots are pretty low carb (about 3 carbs in an average carrot), add celery (effectively zero carbs)

Find a low carb dip - I get a Blue Menu yogurt based dip (Canadian store brand) or many of the "chip dips" that are cream cheese based (just have to watch the calories because they can be high in fat and don't want to expand your waist by overeating) 😁

And you can much away on a super healthy snack that doesn't mess with the blood sugar (for most)
