We use avocado oil for hotter temperatures, olive oil for much other, butter, and ghee for the taste.

I use olive oil and sometimes coconut oil I use rice bran oil for carrot cake as it seems to have a slightly nutty flavour.

I also use concentrated butter for great flavour although care is needed when putting it in cakes as it's very concentrated. If you google what is the equivalent of ....grams of concentrated butter in ordinary butter you'll be given the conversion and some interesting tips from AI
