Hi Quentin , I am Type 1 as well, for me I keep protein bars handy and I stagger my meals . this works for but remember what works for one does not always work for someone else .
1 cup rolled oats (steel cut if you can)
1 cup shredded coconut
1/2 cup raisins / mixed berries dried ( you can use fresh but I am not to sure )
1 cup mixed nuts (chopped) or nuts of your choice
1 cup dark cocoa power (regular cocoa sugar free is also okay)
1/2 coconut oil melted to combine and hold everything together
shape into logs about 5 cm long and bout 1 cm wide
Bake for about 15-20 minutes at about 185 degrees Celsius ( Sorry I don't know what the temp. would be in Fahrenheit) let them cool and then wrap them in wax paper and store in a airtight container if the weather is hot or warm keep them in the fridge.
