I can eat a big meal and within an hour, I am hungry again . I am a type 2 diabetic. I am struggling hard and looking for answers.

"Big" meals are not really necessary if u eat a good balance. Carbs should be the smallest part of your plate 1/3 with protein & veggies 2/3. Have u tried portion control on your plate? Might feel a difference if u eat less carbs.

You could try a "soluable fiber" supplement such as Metimucil (the sugar free one) which is Psyllium fiber or Benefiber which is Inulin fiber - both are naturally sourced - just a teaspoon mixed in water (or any drink that isn't carbonated).

It will do a couple things for you. First, it will give you about 3 grams of fiber which is good for (Type 2's) AND, because it's soluable it will kinda "puff up" in your guts and make you feel more full and as a (by-product) it will trap some of the carbs you eat so that you digest them slower which results in a slower rise in blood sugar which helps prevent a "peak" - this can (very minimally) help reduce your overall blood sugar levels/A1C.

So really a bunch of good reasons to try it.

Do you check your sugar levels. Depending how long you were diabetic before being diagnosed, you can be used to higher sugar levels and once starting medications you feel hunger at a much higher level, once you start getting used to your sugar levels going down over time, you tolerance will be at lower levels. I used to feel hunger and hypo at 12 (216) because my sugar levels when diagnosed was 17.5 (315) to 19.2 (346) , then at 9 (162), I now feel hypo at 5.5 ( 99).

In many cases it took years to become diabetic and by then we are used to high sugar levels. Start by decreasing any added sugar such as in coffee or soda or pop. Read nutrition labels to count how many Carbs you eat in a day per portion, reduce your portion to recommended on the nutrition facts. I have a kitchen scale and weight my food, or measure in a cup according to nutrition facts, I noticed that I was eating a lot more then what 1 portion is suppose to be. Eliminate things slowly, it took years to become diabetic, it will take some time to get used to lower sugar levels.

I managed to lower my A1C from 11.9 in June 2019 to 6.5 last Mars 2020. I at present cannot exercise as I have 4 herniated discs and one is torn, so I did it with diet alone and medications. Once my back improves and the JRA & ostearthritis I may be able to start exercising again. I do walk around and do physio stretches I was given in the past. But if you are able to exercise and eat as per portions and take meds you may be able to decrease your numbers faster.
