So quick back story... Hubby absolutely loves tacos (as in he would eat them 4 of 7 days) but I wish to make mine better for me. Any suggests? Anyone know if taco rice bowls are better? (before anyone suggests quinoa, I cannot stand it as a main part of the dish)

We call those haystacks! Start with a few doritos, fritos, or even brown rice on the bottom and build up with taco meat, lettuce, tomato and cheese. This has become a popular dish to serve at our church's ladies' meetings. Salsa and other topping choices are also offered and ingredients are served buffet-style.

I make taco lettuce wraps worksbfor bith my husband and i.

I also add rice to the wraps to get some carbs in but its such a small amount added that it doesn't spike me much at all (a couplenof points).

taco bowls? eliminate the shell completely and put in a bowl everything else. The meat, the lettuce, tomatoes and whatever else you would put. They are yummy and you have eliminated the high carb part.

There are recipes for grain free taco shells or tortillas online. They are part of the Ketogenic diet. Since I stay as close to zero carbs as possible, never more than 20 gr, they are a great alternative.
