Ideas For Warm Drinks/ Snacks In The Colder Months
A DiabetesTeam Member asked a question 💭

Just curious what ideas others may have for warm snacks & drinks (sorry coffee & tea is out- much too bitter) during the colder months. You know, something you can enjoy, while curled up in a warm blanket with a book. Before, I would have a cup of hot cocoa &/or maybe bake some fresh, hot, cookies. I make vegetable broth, I save all my veg. scrapes, like garlic and onion skins, carrot peels and potato peels, any veg. you use and usually throw away the scrapes. I keep a gallon bag in the freezer and keep adding to it, till it's full. I get a stock pot and put the scrapes in and add a couple of carrots, garlic cloves, pepper corns, red pepper flakes and 2 tablespoons of tomato paste ( 1/2 can and you can freeze the rest and use it on the next batch ). I put enough water to cover the scrapes and add about 4 more cups to that. Bring it to a boil and the lower to a simmer and cook about an hour. Let it cool and strain it in a colander. I freeze it in 1 quart containers and take out one when I want a hot drink and it's so good for you, no oil or fat of any kind. I love it and it's very good on cold days or nights. Keeps from over doing on my dlet.
