@A DiabetesTeam Member it reminds me of unflavoured gelatin - hard to explain, you can taste "something" but not exactly what it is

It's a soluble fiber so it absorbs water from the food it's mixed with but never noted specific flavour

A quick look over that recipe and if you used the almond flour and cauliflower rice as the substitutes it should make a very healthy and fairly low carb meal

And in this case since it's meatballs the almond flour could also be subbed with psyllium fiber husk (bulk food places sell it - same fiber as in Metamucil) and it's an excellent "binder" for ground meat, in place of bread crumbs, even lower carb than the almond flour and adds a good few grams of "really good fiber" to make sure the meal doesn't "hang around longer than necessary before evacuation" 😁 😁
