What were your before eating numbers for each meal. Did your 2 hour numbers after your 1st bite of the meal coincide time wise.
What else did you eat with those meals.

As Henry notes - if you don't know where you were "before eating" then it's tough to say that meal 1 went higher than meal 2 - you may have started meal 1, 20 points higher than meal 2
Second, you didn't state "what kind of bread" the toast was - some whole grain breads have more carbs than even white bread - so depends how many carbs were in the bread AND how many carbs were in the Peanut Butter - unless it was "all natural" then it has "added sugar"
Meals with Fat and Protein (zero carbs in steak) take more time to digest than carbs which are quickly absorbed
Mix the Sweet Potato (lowest carb of all potato's) with the slow digesting fat in the steak and it takes longer to digest the carbs mixed in. Slower digestion = slower carb uptake = lower "spike" after eating
