For me, I eat to my blood glucose meter, my blood glucose numbers spreadsheet, and my food journal. They tell me what foods I can eat somewhat freely, what foods I must limit, and what foods I must almost totally avoid.

I eat to the nondiabetic range of 4.0(72 usa) to 7.8(140 usa). This causes no additional cumulative vascular damage. It also arrests diabetes complications and comorbidities right where they are now.

My meter tells me I can eat no more than 5 net carbs per meal. 2-3 net carbs is better, 5 is pushing the edge.

I avoid all added sugars in food and drink. I avoid all white carbs. I avoid all carbs.

So I am limited to low carb vegetables, protein, and fat. I plate all of my food before eating on a 7" inch plate.

Most of my meals look like stir-fry, or eggs, or soup, or salads, or some combination of the above.

Eggs are relatively inexpensive, quick and easy to prepare and are the mainstay of my right eating lifestyle. I sometimes have different forms of eggs for all my meals during the day. They are quick and easy, I don't have to think. And I can eat in 15-20 minutes.

Omelets, Quiche, Scrambled, over easy, boiled, soft boiled, poached, sunny side up, deviled eggs, in soups, on salads, in stir-fry, an egg wrap (like a tortilla), over a pork chop, in fried rice, in ramen, in lo mein, in Singapore street noodles, in fried cabbage, in pasta carbonara, and 10s of other ways.

I just purchased Palmini linguine noodles at 2 carbs per serving. Will try them out this week. I already do spaghetti squash, zucchini zoodles, summer squash zoodles. Wonderful options.

Most diabetics can handle 100-130 net carbs daily, some can only handle 50-60 daily. Some only 20-30 net carbs daily.

A good place to start if you want to see quicker results is 50-60 net carbs daily. Cut your carbs slowly so your medications can be easily adjusted. That is about 1 serving of carbs... 15 carbs per meal. With 5 carb snacks.

After a couple of months, you can adjust up or down as needed.

There are detailed menus available from the Atkins website. Look for Atkins100, download or print what you want.

Good luck.
