Yes it can cause a bit of a glucose spike. But used in moderation, it has other benefits.

Honey is preferable to sugar and for me, I use a spoonful daily in what my Bride calls hot lemonade, a few drops of lemon juice in a cup of hot water. I use taw local honey. Over a period of weeks, it improved my allergy situation. I am violently allergic to coffee, and am mildly allergic to caffeine and chocolate.

Instead of doubling up on 24 hour allegra allergy medication, I now only have to use it in the spring and fall.

I'm also allergic to all the artificial sweeteners, except the pink packet, saccharine.

Some of the artificial sugars, called alcohol sugars, do not spike blood glucose.

Yes honey does spikes sugar levels. Consume little bit.
