I buy a whole cauliflower and steam it to make cauliflower purée. Add some cheese and garlic or whatever and then puree it. Delicious better than mashed potatoes.
I also make it buffalo style when I have buffalo wings for dinner. I cut in big chunks and roast it in oven.

Great recipes. I also discovered spaghetti squash with this diagnosis. So easy to switch spices up and replaces pasta. Also add chicken and cheese and bake. Season as you want. Also, Wal mart sells a veggie spaghetti noodle if squash not in your liking or in season. It is made with all veggies. Other types of pasta, elbow, etc. are a little harder to find in stores; order on-line but a little pricey.

Well I cut chicken breast into 1/2 - 1 inch pieces and cook in a little bit of olive oil
in a pan, add green onions and garlic, or use different spices each time to change a little, but instead of potatoes or rice, I shred zucchinis and add them to pan when the chicken is cooked for a few min, and it is simple to make and my spouse and stepson love it. I no longer eat pasta or rice, I switched to zucchini instead. Even tried with cucumbers once as did not have zucchini, but although it was not bad, it did not taste as great. Sometimes I add bell pepper or onions.
