I am looking for lunch box ideas that require little cooking and are quick to put together. I need them very low in carb as I find myself very tired after eating carb rich meals.

I love salads and protein.
It really does help to plan your meals for the week . I try to just stick with salads mixed with other proteins and crackers . It helps to have equal carbs and proteins together .
Good question. I'm also on the search for good lunch box snacks. one of my favs is apple, cinnamon, and peanut butter. I core the apple and put it in a sandwich bag and then add the cinnamon to taste, mix the apples and cinnamon in a sandwich baggie and I put peanut butter in a condiment cup with a lid and then at snack time i get it out of the frig and enjoy. I always have good BG when i test 2 hrs later before i go to lunch. I hope this help. You don't have to add the cinnamon but i think it adds to the taste.
