Here is mine:
Salmon Bites
I serve this over a salad but makes a great appetizer) usually romain , cucumber and grape tomatoes and if on hand green onions . I have used chopped fresh mint (i grow my own) in season.
Ingredients;
2 tablespoons unsalted butter, melted
1 tablespoon lemon juice
2 teaspoons grated garlic
¼ teaspoon salt
¼ teaspoon ground pepper
1 pound center-cut salmon fillet, skinned and cut into 1-inch pieces
I serve with a lemon poppy seed dressing made with butter milk

I forgot to put directions

Marinate the salmon with the first 5 ingredients than bake on a shallow pan at 350 ° for about 12 min

My favourite meal is a One Pan stir fry with lots of vegetables and a piece of lean steak. I use broccoli , cabbage, onion. Mushrooms, red sweet bell peppers-Capsicum which I fry in little spray oil and its delicious too.
