Do Vegetables Lose Nutrients When Overcooked?

i like many vegetables like okra, spinach, bitter melon, etc. i've read they have nutrients good for us. i usually sauté with meat or shrimps for flavor (stir fry). often they're overcooked. am i losing what's good for me?

Some vegetables do louse their nutrients value when heated n others will louse it into the water as the vitamins within are water soluble.
