I am new to all this and normally make home made cakes, mince pies, pudding etc. for Chriatmas. Can anyone recommend some recipes that you have used which are more diabetic friendly. Thanks
Go to Joy Bauer's web page, she has a lot of good low sugar and very low fat recipes.
Here is one I like, actual I have plans to make it today. I make a few modifications to it:
I use coconut sugar instead of brown sugar (coconut sugar has a lower GI)
3/4 c of flour and 1/4c whole wheat flour, instead of 1c flour
I also added walnuts and chia seeds, raisins are good too.
the chia made the batter thick so I also added some almond milk.
It's probably best to fallow the recipe the first time you make it, then try it again with my modifications. good thing you have a few month to experiment before xmas.
Almost forgot, I also add cinnamon. (cinnamon helps to control BS spikes)
I use sugar free jelly break. Ssuger free shortbread into it cover with Greek yogurt sprinkled with carob to make a diabetic trifle
