Snack Ideas For Low Fiber Diet.

I am on the anti diabetic diet, a low fiber diet and trying to find some snack ideas.
I cannot have ,
Fresh veggies or fruit
Whole grains
Nuts and seeds
Dried beans peas or lentils
Coconut
Popcorn.

If it has more than 1or 2grams of fiber per serving I shouldn't eat it. Does anyone have any ideas for snacks. The diabetes educators have not been any help. I am not a fan of veggies but am trying to disguise them.

Costco has these small packets of nuts, cranberries, and sunflower seeds...perfect for a snack.

Hi Elmo. Steel cut oat porridge spikes me to 13mmol from mid 5s. Just too many carbs for me.

Oopsies or cloud bread made from Eggs and cream cheese(you can leave the cream cheese out if you want to) is good for burger buns or "bread". Can be used with tuna, cold meats, cheese, whipped cream and cinnamon toppings.
